Here&#8217;s some actual footage of the time I caught my old coworker, Justin, in his office going to town on this mini loaf that was supposed to be for him and his wife LOL:<\/p>\n\n\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/www.mayanrocks.com\/blog\/laura-sandwich.gif\" width=\"218\" height=\"165\" alt=\"laura sandwich gif\"><\/p>\n\n\n<p>Don\u2019t let <a href=\"http:\/\/mayanrocks.com\/?p=203\" target=\"_blank\" rel=\"noopener\">The Great Banana Bread Disaster of 2009<\/a> fool you. I make a mean ass banana bread.<\/p>\n<p><strong>Best Ever Banana Nut Bread with Streusel Topping Recipe<\/strong> (banana bread recipe adapted from <a href=\"https:\/\/www.thebakingchocolatess.com\/sour-cream-banana-bread\/\" target=\"_blank\" rel=\"noopener\">The Baking ChocolaTess<\/a> and streusel recipe from <a href=\"https:\/\/yummyaddiction.com\/moist-banana-bread\/\" target=\"_blank\" rel=\"noopener\">Yummy Addiction<\/a>):<\/p>\n<p><strong>Banana Nut Bread Ingredients:<\/strong><\/p>\n<ul>\n<li>\u00bd cup butter, softened<\/li>\n<li>1 cup sugar<\/li>\n<li>2 eggs beaten<\/li>\n<li>1 \u00bd cups flour<\/li>\n<li>1 tsp. baking soda<\/li>\n<li>\u00bd tsp. salt<\/li>\n<li>1 cup mashed bananas (about 3)<\/li>\n<li>\u00bd cup sour cream<\/li>\n<li>1 tsp. vanilla<\/li>\n<li>\u00bd cup chopped walnuts<\/li>\n<\/ul>\n<p><strong>Streusel Ingredients:<\/strong><\/p>\n<ul>\n<li>3 tbsp. flour<\/li>\n<li>\u00bc cup brown sugar<\/li>\n<li>\u00bc tsp. cinnamon<\/li>\n<li>2 tbsp. unsalted butter, slightly softened and cut into pieces<\/li>\n<li>\u00bc cup chopped walnuts<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<ol>\n<li>Preheat oven to 350 degrees.<\/li>\n<li>Grease a 9-inch loaf pan. Cut a piece of parchment paper and put it on the bottom of the pan (for easy removal).<\/li>\n<li>In a large bowl, cream the butter with sugar until light and fluffy.<\/li>\n<li>Add in the eggs and mix well.<\/li>\n<li>Whisk together the flour, baking soda, and salt, then add into the butter mixture and combine together.<\/li>\n<li>Add the sour cream, bananas, and vanilla and stir well to incorporate, but don&#8217;t overmix.<\/li>\n<li>Stir in chopped walnuts.<\/li>\n<li>Pour into prepared pan.<\/li>\n<li>Add the flour, brown sugar, and cinnamon in a medium bowl and mix until combined. Cut in the butter using your fingers or a pastry blender, until it resembles coarse crumbs. Stir in chopped walnuts. Sprinkle the streusel topping evenly over the batter.<\/li>\n<li>Bake for 50-60 minutes.<\/li>\n<li>Cool for 10 minutes and then turn the loaf out onto a rack.
