She has been doing so well, and I wanted to make something special she could eat. One of my favorite dishes ever is the Spicy Fusilli Vodka<\/a> at Jon & Vinny’s<\/a> in LA. Carbs and alcohol? What’s not to love? Luckily, vodka is naturally gluten-free, so I just found some gluten-free pasta<\/a>, dairy-free parm<\/a>, and replaced the heavy cream with coconut milk. Normally, I don’t like coconut in savory food, but you couldn’t even tell I swapped the dairy out. The result was *chef’s kiss* \ud83d\ude19\ud83e\udd0c<\/p>\n
