There was this great little resto by my apartment in Redondo Beach &#8211; <a href=\"https:\/\/maps.app.goo.gl\/xuoMirhSy69tswG68\" target=\"_blank\" rel=\"noopener\">The Empanada Shop<\/a>. All the empanadas I&#8217;ve had there were good, but my absolute favorite was the Potato Rajas Cheese one.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mayanrocks.com\/blog\/sandra-lee-semi-homemade.gif\" width=\"100%\"><\/p>\n<p>I wanted to try recreating it at home, but with minimal effort \ud83d\ude05<\/p>\n<p>IDK if y&#8217;all remember that <a href=\"https:\/\/www.imdb.com\/title\/tt0981250\/\" target=\"_blank\" rel=\"noopener\"><em>Semi-Homemade Cooking with Sandra Lee<\/em><\/a> show on Food Network than ran in the early 2000s (I hardly remember the awful food she made, but I remember all the cocktails). You guys, I am Sandra Lee &#8211; <del>I love vodka<\/del> the less prep the better! If I can buy it already chopped, triple washed or canned, I&#8217;m doing it.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mayanrocks.com\/blog\/roasted-poblanos.jpg\" width=\"100%\"><\/p>\n<p>I had to buy whole potatoes bc they don&#8217;t come cubed and boiled anywhere, and I would&#8217;ve bought canned roasted poblanos if I could find them! I had to roast that shit myself \ud83d\ude05<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mayanrocks.com\/blog\/empanada-station.jpg\" width=\"100%\"><\/p>\n<p>I cubed and boiled the potatoes, mashed them with my <a href=\"https:\/\/www.amazon.com\/dp\/B0CPLVLFK2\" target=\"_blank\" rel=\"noopener\">immersion blender<\/a>, and mixed in shredded Mexican cheese and diced roasted poblanos. I spooned some filling into&nbsp;pre-made and pre-cut <a href=\"https:\/\/www.goya.com\/en\/products\/empanada-dough-criollas-for-baking-and-frying\/\" target=\"_blank\" rel=\"noopener\">empanada dough<\/a>, and sealed them with <a href=\"https:\/\/www.amazon.com\/dp\/B0D9D9S1SN\" target=\"_blank\" rel=\"noopener\">empanada press molds<\/a>. I brushed the tops with egg wash and baked them for 30 minutes at 350\u00b0.<\/p>\n<p><img decoding=\"async\" src=\"http:\/\/www.mayanrocks.com\/blog\/potato-rajas-empanadas.jpg\" width=\"100%\"><\/p>\n<p>These empanadas came out amazing!
