
It’s no secret that I love empanadas (and hate raisins in them) 😆

One thing I miss about living in LA is the food. There was this great little resto by my apartment in Redondo Beach – The Empanada Shop. All the empanadas I’ve had there were good, but my absolute favorite was the Potato Rajas Cheese one.

I wanted to try recreating it at home, but with minimal effort 😅
IDK if y’all remember that Semi-Homemade Cooking with Sandra Lee show on Food Network than ran in the early 2000s (I hardly remember the awful food she made, but I remember all the cocktails). You guys, I am Sandra Lee – I love vodka the less prep the better! If I can buy it already chopped, triple washed or canned, I’m doing it.

I had to buy whole potatoes bc they don’t come cubed and boiled anywhere, and I would’ve bought canned roasted poblanos if I could find them! I had to roast that shit myself 😅

I cubed and boiled the potatoes, mashed them with my immersion blender, and mixed in shredded Mexican cheese and diced roasted poblanos. I spooned some filling into pre-made and pre-cut empanada dough, and sealed them with empanada press molds. I brushed the tops with egg wash and baked them for 30 minutes at 350°.

These empanadas came out amazing! Or shall I say, ‘mmmpanadas’ 😋
